* 1 tablespoon olive oil
* 1 large onion, chopped
* 2 garlic cloves, minced
* 1 jar (16 oz) salsa
* 1 can (14 1/2 oz) diced tomatoes, undrained
* 1 can (14 oz) artichoke hearts, drained and quartered
* 1 can (14 oz) chicken broth
* 1 package (8 oz) yellow rice
* 1 can (12 oz) solid white tuna, drained and flaked
* 1 package (10 oz) frozen green peas

1. Saute onion and garlic in hot oil over medium heat for about 5 minutes (until onion is transparent). Add salsa, tomatoes, artichokes, broth and rice.
2. Heat to boil. Bring heat down, cover and simmer for 15 minutes.
3. Add tuna and peas. Cover and cook another 10 minutes, until everything is hot.
