Easy Stuffed Cabbage |
Ingredients

* 1 lb. ground beef, uncooked
* 1 lb. ground pork, uncooked (or substitute raw pork sausage, like Jimmy Dean)
* 1 egg
* 1 small onion, finely chopped
* 1 clove garlic, crushed or finely chopped
* 1/2 tsp. salt
* 1/4 tsp. black pepper
* 1 large (or 2 small) heads of cabbage
* 1 large can chicken broth
* 1 large (28 oz.) can diced tomatoes

Directions

1. Boil cabbage in chicken broth (this adds great flavor) until tender. Cool and peel off whole leaves gently.
2. In large bowl combine the beef, pork, egg, onion, garlic, salt and pepper. Mix thoroughly.
3. Lay each cabbage leaf out and spoon a generous amount of meat mixture into each leaf. Roll tightly while folding ends under.
4. Tuck all the rolls tightly into a lightly greased baking dish and pour the can of diced tomatoes over all.
5. Cover and bake at 300 degrees for 2 1/2 to 3 1/2 hours or until meat is thoroughly cooked.

This is a simple Polish dish. Cabbage is so inexpensive... we should serve it more often! For more flavor you can choose a raw pork sausage (like Jimmy Dean) with all the spices already added. Cabbage can stand up to a lot of flavor.
