Easy To Do Potato Hash |
Ingredients

* 2 large Idaho potatoes
* 1 TBSP extra-virgin olive oil
* 2 TBSP butter
* 2 small, soft apples, chopped
* 1 small onion, chopped
* Salt and pepper

Directions

1. Rinse potatoes.
2. Carefully take a knife and place several small holes around the whole potato.
3. Place on microwave safe plate and microwave about 10 minutes.
4. Potatoes should be slightly soft.
5. Once potatoes cool enough to handle cut into small cubes.
6. Heat oil and butter in skillet over medium heat until butter is melted.
7. Add chopped apples and chopped onions to skillet.
8. Allow to cook 5 minutes, stirring occasionally.
9. Place cubed potatoes in skillet with salt and pepper to taste.
10. Continue to cook until potatoes are brown.
