Easy Walk-Away Risotto |
Ingredients

* 4 Tablespoons butter
* 1 medium onion, chopped
* 1/2 cup finely chopped celery
* 1/4 cup finely chopped red bell pepper
* 1 cup rice (use arborio or other short grain rice)
* 1/8 teaspoon thyme
* 1/2 teaspoon salt
* 1/2 cup dry white wine
* 1 3/4 cup chicken broth

Directions

1. Put butter in large saucepan and heat over medium-high; add onion, celery, and bell pepper and cook for 5 minutes or until veggies are softened somewhat.
2. Stir in rice and continue to cook until rice is transparent.
3. Add thyme, salt, and white wine and stir.
4. Add about half the chicken broth, stirring constantly until liquid starts to become creamy, then add the remaining chicken broth and stir.
5. Reduce heat to low, cover, and simmer for 30 minutes.

I call this recipe "walk-away" because if you've ever made Risotto, you know half the work and trouble is standing at the stove, adding ladles of broth and stirring, adding and stirring, adding and stirring, adding and stirring...
This recipe is easier and turns out very nice. You do only one stirring to get the starches working to turn the rice all smooth, then you cover the pan and walk away for 30 minutes. It may not be the official way to make rissotto or risotto or rissoto, but it's still plenty tasty.
