Exotic Ramen Noodle Coleslaw |
Ingredients

* 2 bags coleslaw or 1 large head green cabbage, shredded
* 6 green onions, chopped, including tops
* 3/4 cup sliced almonds, *toasted
* 1/2 cup sesame seeds, *toasted
* 2 packages Chinese Ramen noodles, UNCOOKED, crumbled slightly
* 1 cup light olive oil or other salad oil
* 1/3 cup rice wine vinegar
* 1 Tbsp sugar
* 2 tsp salt
* 1 tsp black pepper

Directions

1. Put coleslaw, onions, *toasted almonds, *toasted sesame seeds, and ramen noodles in large bowl and toss well.
2. In separate bowl, whisk together the oil, rice wine vinegar, sugar, salt, and pepper until well combined and slightly thickened.
3. Add just enough dressing to moisten coleslaw mixture, tossing to combine. Serve immediately.
4. If you are making this ahead, keep coleslaw and dressing in separate containers and toss together just before serving.

Turning two cheap ingredients (cabbage and ramen noodles) into a fancy salad is easy if you use some interesting ingredients. Toasted sesame seeds bring this salad up a notch... or two!
*Even if you buy toasted almonds and toasted sesame seeds, you still want to toast them in a dry skillet before using them in this salad. The flavor is intensified when the natural oils are heated, so much more than the commercial toasting process. It's easy and fast. Just heat a dry (no oil) skillet over medium heat, toss in the almonds, and shake for about a minute or until you can smell the fragrance; immediately remove and dump out into a bowl to cool slightly. Then do exactly the same for the sesame seeds.
