Firecracker Ooh and Aah Potatoes |
Ingredients

* 1 (28 oz) pkg. O'Brien potatoes
* 1 TBSP olive oil
* 1 (8 oz) pkg. shredded cheddar cheese
* 1/2 C mayonnaise
* 1 tsp. mustard
* 1/3 C cooked bacon, crumbled

Directions

1. Heat the olive oil over medium heat until hot but not smoking.
2. Place the potatoes in the hot oil.
3. Cook as directed on the package.
4. Drain the potatoes and place in a large bowl.
5. Add 1/2 of the cheese.
6. Fold in the mayonnaise and the mustard.
7. Sprinkle in the bacon and stir to combine.
8. Place the mixture into the prepared baking dish.
9. Preheat the oven to 375 degrees.
10. Just before baking sprinkle the remaining cheese over the top of the casserole.
11. Bake 25 minutes or until the cheese has melted and the top is a light brown.
