1. In large glass bowl, stir together the soy sauce, brown sugar, pineapple, ginger, and salt and pepper, then set pork roast in bowl, spooning mixture over to coat pork; cover with plastic wrap and refrigerate overnight; turning roast over a couple times to make sure it marinades evenly.
2. To prepare, put pork roast in crock pot, and pour the marinade over.
3. Cover and cook on LOW heat for 6 to 7 hours or until roast is tender.
4. Remove pork roast to platter and spoon sauce over when serving.

It's amazing what just a few ingredients can do! This is the perfect example. The pork turns out tender and flavorful.
If you want to build on this recipe, it's easy. Just add to the crock pot some sliced sweet red bell pepper and onion. You can add a can of chicken broth to create more liquid, then thicken it a bit at the end with a combination of cornstarch and water. Serve over brown rice for a complete meal.
