Four Ingredient Sausage Sweet Pepper Skillet with Bow Tie Pasta |
Ingredients

* 8 oz uncooked bow tie pasta
* 12 oz Italian sausage links, cut into 1 inch pieces
* 2 red sweet bell peppers, cut into thin strips
* 1/2 cup beef broth
* salt and black pepper to taste

Directions

1. Cook the pasta as directed on the package; drain well, and pour into serving bowl, and set aside.
2. Place the sausage and peppers into a large skillet and cook over medium-high heat for 5 minutes, stirring often, until the sausage is browned and the bell peppers are tender.
3. Pour the broth into the skillet, sprinkle with salt and black pepper to taste, stir and bring to a boil.
4. Reduce the heat to low and simmer slowly for 5 minutes.
5. Pour the sausage mixture over the cooked pasta in the serving bowl and toss to combine ingredients well. Serve hot.

Skillet dinners are perfect for busy nights, especially when kids need to be fed. This is a quick kid-friendly dinner with simple ingredients that go together very easily.
My kids won't eat green bell peppers, but red bell peppers are sweeter. I just watch for sales, keep sausage in the freezer and their favorite pasta, which happens to be bow tie, in the pantry and dinner is ready in minutes. If you want to boost the vegetable factor, broccoli is a good bet. Just throw in some florets when you saute the sausage and red bell peppers. Delicious!
