Fruity Sweet Barley Dessert


* 1/2 cup pearl barley, not cooked
* 2 1/2 cups water
* 1/2 cup golden raisins
* 1/2 cup chopped prunes
* 1/2 cup chopped dried apricots
* 1 tablespoon brown sugar
* 1 tablespoon lemon juice


1. Place barley and water in a saucepan pan; heat to a boil. Cover and simmer for 20 minutes.
2. Stir in raisins, prunes and apricots then simmer for 5 minutes.
3. Stir in brown sugar and lemon juice.
4. Serve warm.


I found barley in my pantry and I was stumped about how to use it. My husband does not like barley soups of any kind, so that caused a problem. I didn't want to throw it out, so I thought I could disguise it if I surrounded it with sweet stuff. It worked! This simple dish is something I now call "Sweet Pilaf" and my husband is none-the-wiser that he's actually enjoying barley.
