Garbanzo Bean and Bell Pepper Skillet


* 1 tablespoon vegetable oil
* 1 green bell pepper, diced
* 1 onion, thinly sliced
* 1 clove garlic, minced
* 1 can garbanzo beans, drained
* 1/8 teaspoon freshly ground black pepper


1. Saute green pepper in hot oil over medium heat for a couple minutes until just beginning to get soft. Add onions and garlic and continue cooking until soft and transparent; stir often.
2. Stir in beans and freshly ground black pepper and cook until everything is heated through, stirring often.


Garbanzo beans, or chick peas as they are sometimes called, are a wonderfully tasty way to add extra protein to your diet without needing to add more meat to your meals. There are many soups and casseroles that have added garbanzo beans in the recipe, but I really enjoy this side dish which actually features garbanzo beans as one of the main ingredients. The savory combination of flavors and colors also makes this dish a great side for company meals. Try using a sweet red or orange bell pepper or a combination of different colors to really brighten up this dish.
