Garlic Butter Roasted Potato Wedges


* 4 medium potatoes
* 3 tablespoons butter, melted
* 1/4 teaspoon garlic powder
* 1/4 teaspoon dried parsley
* salt and pepper to taste


1. Preheat oven to 400.
2. Cut potatoes lengthwise in quarters then place skin side down on baking sheet.
3. In bowl, mash butter, garlic powder, and parsley together until well combined.
4. Brush butter mixture on potato wedges.
5. Sprinkle with salt and pepper.
6. Bake in preheated oven for about 50 to 60 minutes or until golden brown.
7. Serve hot as side dish or as a snack with cold dips.


If you want to serve these roasted potatoes as a snack, cut the potatoes into 8ths instead of quarters so they're a bit smaller. Then roast them at 400 degrees for 40 to 50 minutes. Just keep your eye on them so they don't burn.

When you make them as a side dish (cut in quarters) they are the perfect accompaniment to grilled steak or chicken.
