1. Preheat oven to 400.
2. Cut potatoes lengthwise in quarters then place skin side down on baking sheet.
3. In bowl, mash butter, garlic powder, and parsley together until well combined.
4. Brush butter mixture on potato wedges.
5. Sprinkle with salt and pepper.
6. Bake in preheated oven for about 50 to 60 minutes or until golden brown.
7. Serve hot as side dish or as a snack with cold dips.
