Garlic Chicken with Mushroooms in Balsamic Vinegar |
Ingredients

* 2 TBSP canola oil
* 4 chicken breast halves, boneless and skinless
* 8 oz. white mushrooms, quartered
* 2 garlic cloves, minced
* 1/2 C chicken broth
* 2 1/2 TBSP balsamic vinegar
* 1/4 tsp. dried thyme, crushed
* 1/8 tsp. ground black pepper

Directions

1. Place the oil in a skillet over medium high heat.
2. Add the mushrooms and garlic to the hot oil and sauté 5 minutes or until nicely browned.
3. Reduce the heat to medium low.
4. Add the chicken breast halves. Cook 15 minutes, turning once, or until the chicken is cooked all the way through.
5. Pour in the chicken broth and balsamic vinegar.
6. Gently stir in the thyme and pepper.
7. Cover the skillet and allow the mixture to simmer slowly for 15 - 18 minutes or until heated completely through.

Besides salad dressing, I don't know what to do with balsamic vinegar. Until now that is. I love the tart flavor of this sauce with the mushrooms. It's a nice change from the creamy mushroom sauces I've been making with chicken breasts. This isn't as heavy and could be served for lunch with just a little salad.
