Gazapacho

* 2 cans (10 3/4 oz each) tomato soup
* 3 cups tomato juice
* 2 1/2 cups water
* 1 1/2 cups chopped cucumber
* 1 1/2 cups chopped tomato
* 1 cup chopped sweet onion
* 1/4 cup wine vinegar
* 2 tablespoons Italian dressing
* 2 tablespoons lemon juice
* 2 garlic cloves, minced
* 1/2 teaspoon salt
* 1/2 teaspoon pepper
* 1/2 teaspoon hot sauce
* 1/4 teaspoon garlic salt

1. Mix all ingredients together in a big serving bowl. Cover and refrigerate overnight.
2. Serve in big bowls with crusty bread for dipping.

Gazapacho... what else can I say? This is an incredibly romantic meal - a Mom and Dad meal. Kids won't really appreciate Gazapacho because of it's oily texture and spicy flavor. Some people put a dollop of sour cream on top, but I like the clear soup and don't want the sour cream to make it cloudy. Dip some good, crusty bread in it, and enjoy a leisurely meal on a hot summer day with your husband... while the kids are with the grandparents!
