Ginger-Apple Harvest Juice |
Ingredients

* 11 large green apples, cored and chopped
* 1 large or 2 small beet root, peeled and chopped
* 2 in. piece of fresh ginger, chopped
* equipment needed: food processor or juice extractor

Directions

1. Place the chopped apples into a juice extractor or food processor.
2. Add the beet root and ginger.
3. Process until the mixture becomes juice.
4. Place a sieve over the top of a pitcher.
5. Pour the juice mixture into the sieve and squeeze the juice into the bowl.

Don't let the kids know they're drinking beet juice! You can pull this one over even the most finicky palate. The ginger added gives the apple-beet combination a really interesting flavor. To me, the whole thing comes out a bit like a very healthy and flavorful gingerale. Good and good for you!
You could add just a splash of club soda or other clear fizzy drink to make it more festive. Add ice and it's a great summertime "splasher".
