Ginger Cranberry Chicken Skillet


* 1 Tbsp margarine or butter
* 4 boneless, skinless chicken breasts
* 1 cup whole cranberry sauce
* 2 Tbsp honey
* 1 tsp grated fresh ginger root


1. Melt the margarine in a skillet over medium heat, add chicken and brown for 12 to 15 minutes, turning occasionally until cooked through.
2. Remove the chicken from the skillet, set aside on a serving platter and cover lightly with tin foil to keep warm.
3. In the same skillet, add the cranberry sauce, honey, and ginger and cook over medium-low heat, stirring often, for 5 minutes or until sauce gets smooth and heated through.
4. Serve chicken with sauce spooned over.

Makes 4 servings


This dish has just the right amount of sweet and tangy. If youíre looking for something a little different to do with some plain old chicken breasts, this recipe tops the list. Itís quick, easy and tastes like heaven. Serve alongside brown or yellow rice and steamed broccoli. Very delicious and kid-friendly.
