Ginger has become one of my favorite flavors, and judging from all the available salad dressings on the grocery store shelves that feature ginger, I guess I'm not alone. This simple dressing features ginger but also offers a nice complimentary tanginess and freshness courtesy of the vinegary, soy sauce, onion, and celery.
A little heads-up on the ginger... go ahead and buy a few of those goofy looking ginger roots, do not peel them, just wash, dry completely, wrap them tightly and put them in the freezer in an air-tight container. When you're ready to add ginger to a recipe, just grab it out of the freezer and grate it frozen. Most of that brown papery covering will be left on the outside of the grater, and the little you get won't bother the recipe. Then pop it back in the freezer for the next time.
