1. Mix the 2 flours, sugar, starch, baking soda and powder and the salt together well.
2. In a separate bowl whisk together the milk, egg, vanilla and oil.
3. Stir in to the dry ingredients well and let stand for 5 minutes.
4. Heat a griddle, pour 1/2 C of the batter onto the griddle and fry until brown on both sides.

Buckwheat flour is not a form of wheat, despite the name. Buckwheat is actually related to rhubarb. The small seeds of the plant are ground to make flour. Because the taste is very strong and nutty, buckwheat is not usually used alone in a recipe, but adds a lot of flavor when blended with other flour.
You can use wheat flour instead of gluten free flour in this recipe if you wish.
