Gluten Free Fruity Pancakes


*1/2 C gram flour (aka chickpea flour, garbanzo flour, or besan)
*1 C cornstarch
*1/4 C tapioca starch
*2 tbsp fruit sugar
*1 tsp baking soda
*Cinnamon to taste
*1 tbsp of mixed dried fruit, chopped



1. Place the first 7 ingredients into a mixing bowl.
2. Slowly add the water, mixing as you add until the desired consistency is reached.
3. Heat a skillet until hot, ladle the mix one ladle at a time into the hot pan.
4. Cook for 2 minutes flip and cook 2 minutes longer or until brown.


Just because you're eating a gluten free diet doesn't mean you have to sacrifice your morning pancakes. These fruity delicious pancakes are just as easy to make as any. You just need to have the right ingredients and you can cook up a stack of pancakes that everyone will enjoy.
