Good for You Cauliflower Mash |
Ingredients

* 1 bag frozen cauliflower
* 4 ounces cream cheese (may use low-fat)
* 1/2 C sharp cheddar cheese (may use low-fat)
* 2 tsp. garlic (or 2 cloves, grated or chopped)
* Salt and pepper to taste

Directions

1. Cook the cauliflower as directed on the package. Don't over cook please!
2. Drain very well.
3. Place the cauliflower into a blender or food processor and blend until the cauliflower is in a mashed consistency.
4. Add the cream cheese, cheddar cheese and garlic.
5. Continue blending until all the ingredients are incorporated together.
6. Sprinkle in the salt and pepper to taste and stir together.
7. Remove and spoon into a serving bowl.

This is the fast method because you're using frozen cauliflower. You can substitute a large head of fresh cauliflower. Just clean and cook until the cauliflower is done, but not "mushy".
I like this as a "substitute" for mashed potatoes. You can use low-fat cheeses to make this a low glycemic friendly dish and you'll never miss eating potatoes!
