Potato and Celery Fish Soup |
(Grandma's Fish Soup) |
Ingredients

* Olive Oil
* 5 lbs diced Red Potatoes
* 1 bunch of diced Celery
* 1 cup Fresh Parsley (cut up with scissors)
* 2 bunches Green Onions (cut into big pieces)
* 1/2 - 1 Tablespoon salt
* 1/4 - 1/2 Teaspoon pepper
* 2 big cans Chicken Broth
* 3 - 3-1/2 lbs Cod (whole) thawed or fresh
* 1 Quart Half & Half

Directions

In Big Stock Pot
Heat 1/4 to 1/2 cup olive oil over medium heat (add more olive oil if needed)
Saute over medium heat:
* 5 lbs diced Red Potatoes
* 1 bunch diced Celery
Stir until potatoes & celery soften (become clear)
Add
* 1 cup Fresh Parsley (cut up with scissors)
* 2 bunches Green Onions (cut into big pieces)
* 1/2 - 1 Tablespoon salt
* 1/4 - 1/2 Teaspoon pepper
Stir and saute until mixed
Add
* 2 big cans Chicken Broth
Simmer 10 minutes (on low!)
Add
* 3 - 3-1/2 lbs Cod (whole) thawed or fresh
Simmer on Low 5 minutes until fish flakes & is white.
Turn off the stove
Add:
* 1 Quart Half & Half
Let Stand 5 minutes and serve.

This is Grandma's Fish Soup recipe. It's been my favorite comfort food for a few decades. You may add carrots with the celery if you like it.
