Great Northern Kielbasa Skillet |
Ingredients

* 7 strips of bacon
* 1 medium onion, diced
* 1 to 1 1/2 lbs smoked kielbasa sausage, cut diagonally into bite size pieces.
* 2 cans (15 1/2 oz each) great northern beans, not drained
* 2 cans (8 oz each) tomato sauce
* 1 can (4 1/2 oz) green chiles
* 2 carrots, thinly sliced
* 1/2 green bell pepper, chopped
* 1/2 teaspoon italian seasoning (or your choice any blend of oregano, basil, garlic, etc.)
* 1/2 teaspoon dried thyme
* 1/8 teaspoon pepper

Directions

1. Brown bacon in large heavy skillet until crisp. Remove and spread out on paper towels to drain and set aside. In same skillet (in bacon drippings) cook onion and sausage until lightly browned & tender. Drain off any extra fat.
2. Add the rest of the ingredients to skillet, stir well and bring to a boil. Turn heat down to low, cover and simmer very slowly for 40 - 45 minutes, stirring occasionally. Make sure it's simmering slowly. The beans are delicate and will break up if boiled too hard.
3. Serve with bacon crumbled on top.

This is a comfort food that's smoky, spicy and good. You'll want to try serving it with scrubbed, diced and boiled Yukon Gold potatoes, tossed with butter and parsley. Kielbasa dishes are not considered real diet friendly, but a small serving satisfies so you don't have to load up!
