* 2 cups cucumber, sliced and halved
* 2 tomatoes, diced
* 1/2 cup green peppers, diced
* 1/4 cup sliced ripe (black) olives
* 1/2 cup feta cheese, crumbled
* 1/2 cup red onion, diced
* Greek salad dressing
* salt and pepper to taste
Directions
1. Put all salad ingredients (not dressing) in a large bowl; toss to mix.
2. Add Greek dressing, toss, and add more until desired amount. Serve immediately.
Story
This is wonderful just how it is, but if you want to stretch it a little, you can serve it over or tossed in with spring greens or romaine lettuce.
