Grilled Summertime Chicken Sandwiches

Ingredients

* 1/4 C fat-free Italian dressing
* 3 TBSP dried breadcrumbs
* 1/2 tsp. Italian seasoning
* 1 lb. chicken breasts, boneless, skinless and cut into 4 pieces
* 4 slices reduced-fat mozzarella cheese
* 1/2 C lettuce, shredded
* 1 small tomato, sliced thin
* 4 reduced-calorie hamburger buns

Directions

1. Pour the Italian dressing into a shallow bowl.
2. Stir together the breadcrumbs and Italian seasoning in a separate bowl.
3. Lay the chicken pieces in the dressing being sure to cover completely.
4. Place the chicken pieces in the dry mixture and coat completely.
5. Heat the grill to medium temperature.
6. Grill the chicken 5 minutes.
7. Turn and continue grilling 3 minutes or until juice runs clear when pricked with a fork.
8. Place a slice of cheese on each piece of chicken.
9. Continue to grill until the cheese just starts to melt.
10. Remove and place on each bun.
11. Top with the lettuce and tomato and serve immediately.
