Guacamole Coming Up


* 2 ripe avocados, peeled and chopped very fine
* 1 medium onion, diced
* 2 tomatoes, diced
* 2 cloves garlic, minced or grated
* 1 teaspoon red chili flakes
* 1 tablespoon lemon juice
* salt and pepper to taste


1. Put all your ingredients in a blender or food processor and blend until smooth. Don't overblend. You want a little tomato and onion pieces to survive!
2. Spoon into a nice serving bowl and serve immediately with tortilla chips.


When I crave guacamole, I want it now! This is a quick and easy way to have instant gratification and a really good guacamole. You'll notice I ask you to spoon it into a serving bowl. I know you'll be tempted to eat it right out of the blender, but please don't!
If you do want to refrigerate it to be served later (there are some crazy people out there), cover with plastic wrap. Before serving, let it sit out until it's not icy cold any longer. The flavors don't hold up as well when it's icy cold.
