Healthy Lemon Lime Quinoa Salad |
Ingredients

Salad:
* 1 cup quinoa (traditional or Inca Red)
* 1/2 tsp salt
* 1 can garbanzo beans, drained and rinsed well
* 1/2 cup cilantro, chopped
* 1/4 cup sweet onion, diced small
* 1/4 cup celery, diced small
Dressing:
* 1 garlic clove, grated
* 1/4 cup tahini
* zest and juice of one lemon
* zest and juice of one lime
* 2 Tbsp olive oil
* 2 Tbsp water
* 1/4 teaspoon salt

Directions

1. Cook quinoa according to package directions. *See note below.
2. Meanwhile, put the dressing ingredients in
a bowl and whisk together, then set aside.
3. When quinoa is done cooking, fluff with a fork and dump into a big salad bowl.
4. Add the remaining salad ingredients, toss together.
5. Whisk up the dressing again, then drizzle about 3/4 the dressing over salad, toss, taste, and keep adding until you have the amount of dressing you like.
6. Serve immediately or may be chilled slightly before serving.
*I have found that cooking quinoa with just a bit less water turns out better for me. Try one cup quinoa to 1 3/4 cup water instead of 2 cups as directed on the package. The quinoa stays a little fluffier in my opinion.

Quinoa is so delicious and healthy, I am on a mission to find more and more ways to enjoy it. Hot, cold, saucy, fluffy, main dish, side dish... it doesn't matter. It's THAT versatile.
I suggest trying Inca Red quinoa for this salad, and others. It's very pretty and the familiar quinoa 'curlicue' stands out more. Also, once you discover using quinoa in this salad, tweak the recipe to include other beans or vegetables. Enjoy!
