Healthy Pecan Waffles

Ingredients

* 1 1/4 C of flour
* 1/4 C of wheat bran
* 1 tsp sugar (or omit)
* 2 1/2 tsp baking powder
* 1/2 tsp salt
* 1 egg
* 1 egg white
* 1 1/2 C of skim milk
* 2 tbsp canola oil
* 1/3 C of pecans, chopped

Directions

1. Preheat the waffle iron.
2. Place the flour, wheat bran, sugar, baking powder and salt in a bowl and stir to combine.
3. Whisk together the egg, egg white, milk and oil in a separate bowl. Stir the egg mixture into the flour mixture well. Fold in the pecans.
4. Cook as directed by the manufacture for your specific waffle iron.
Makes 6 waffles

These waffles are perfect for anyone who likes a touch of sweet and crunch for breakfast. Top with fresh fruit and a little drizzle of natural honey for a really healthy meal in the morning.
