Healthy Turkey Sausage Egg Veggie Wraps |
Ingredients

* 1 lb. turkey Italian sausage links, casing removed (or bulk ground turkey sausage)
* 1 sweet red pepper, diced
* 1 onion, diced
* 32 oz carton of egg whites
* 1 (4 oz) can of green chili peppers, chopped
* 1 tsp chili powder
* 10 (8 in) flour tortillas
* 1 1/4 cup salsa

Directions

1. Preheat oven to 350 degrees, and prepare a 9x13 baking dish by coating with nonstick cooking spray.
2. Take the sausage out of the casings and put in heavy skillet over medium heat, cooking for 10 minutes, or until browned, breaking up as it cooks.
3. Transfer to the prepared baking dish and sprinkle the red pepper and onion over the top of the sausage.
4. Pour the egg whites into a bowl and add the green chili peppers and chili powder and stir until blended well.
5. Pour the mixture over the top of the sausage and put in preheated oven and bake for 30 minutes or until eggs are set.
6. Remove pan and break up the mixture with a spoon and let cool.
7. Spread about 2/3 cup of the mixture down the center of each tortilla and top with salsa.
8. Fold the bottom of the tortilla up and over the sausage-egg mixture, then roll the sides tightly to form the wrap.
9. Serve immediately (or freeze - directions below.) Makes 10 wraps.

This is a great breakfast burrito, lunch, or even a light dinner. The recipe makes 10 wraps, so it's perfect for a large gathering or a buffet brunch. You can also use 6 inch tortillas to make smaller wraps.
These wraps can also be frozen very successfully. Just let the wraps cool after assembling, then wrap each one tightly with plastic food wrap, then place in freezer bags and store in freezer until ready to enjoy.
To reheat, remove from the freezer, unwrap, and place in the microwave on high for 2 to 3 minutes or until heated through, or place on baking sheet in oven at low temperature of 175 for about 20 minutes.
These wraps are not only easy to make and handy to have in the freezer, they are also nutritious and healthy. I use egg whites to eliminate the cholesterol, but you don't have to if you don't want to. The equivalent is about 20 whole eggs, which gives each wrap 2 eggs; a very filling serving.
