Heart Healthy Cheesy Ham Omelet |
Ingredients

* 1/2 C of sweet onion, chopped
* 2 tsp olive oil
* 1 C of egg substitute (or egg white only)
* 1/2 C cooked lean ham, diced (or smoked turkey)
* 1/4 tsp salt
* 1/8 tsp pepper
* 1/8 tsp paprika
* 3 tbsp fat free cream cheese, cubed

Directions

1. Place onion and oil into a skillet over medium heat and cook the onion, stirring often, for 4 or 5 minutes or until soft.
2. Add the egg substitute to the skillet, lifting the edges to let the uncooked egg flow underneath.
3. When the eggs are set, add the ham, salt, pepper and paprika to one half of the egg.
4. Place the cream cheese cubes on top.
5. Fold the omelet over the top of the filling.
6. Cover and cook 2 minutes longer or until the cheese has melted completely.

Using egg substitutes, or egg whites only, lowers the cholesterol, and using fat-free cream cheese eliminates the fat. So, you CAN eat a delicious omelet after all! Be sure to use only lean ham, or use smoked turkey if you wish.
Omelets are easier to make than you might think. There is need to flip them while cooking. By lifting up the edges of the egg as it sets it will allow the uncooked egg to run underneath. This will cook the egg completely without the mess of trying to get it flipped just right. Enjoy!
