Heart Healthy Turkey Onion Omelet


*2 tsp olive oil
*1/2 cup sweet onion, chopped
*1 cup egg whites
*1/2 C cooked smoked turkey, diced
*1/4 cup shredded skim milk mozzarella cheese
*1/8 tsp pepper
*1/8 tsp paprika


1. Heat the oil in a skillet and sautÚ the onions for 5 minutes then set aside.
2. Stir in the egg substitute and cook until set.
3. Sprinkle in the onions, turkey, cheese, pepper and paprika and fold the egg over the filling.
4. Reduce the heat to low, cover the pan and cook 2 minutes or until the cheese melts.


Use egg whites in a carton to make this omelet really easy. What makes this omelet tasty is you're using A LOT of onion and smoked turkey. When eliminating certain foods from your diet I find that by adding more quantity of healthy foods (like onion) to dishes, you don't even notice anything missing (like egg yolks). Enjoy!
