Hearty Black Eyed Peas and Ham - Crock Pot


* 1 lb frozen black eyed peas
* 1 cup chicken broth
* 2 ribs celery, sliced
* 4 cloves garlic, minced
* 1 bunch green onions, chopped
* 1 cup diced cooked ham
* 1/4 teaspoon black pepper


1. Put all ingredients in crock pot and mix well.
2. Cook, covered, on low for 6-7 hours.


Black eyed peas are one of those foods that either you know them or you don't. I'd never cooked them before this recipe, but will certainly add them to our regular meal plans. This crock pot recipe turned out very well for several reasons. The garlic flavor was fantastic and the ham was nice and tender.

One piece of advice - buy good ham. Don't buy that stuff in the bags you'll find with the prepackaged lunch meats. Go to the deli and choose a good Virginia ham. This adds a great deal of flavor to this dish.
