Herbed Feta Butter for Sweet Corn


*1/4 cup crumbled feta
*3 tbsp butter, softened
*2 tbsp fresh mint, chopped
*1 tsp fresh thyme, chopped
*Salt and black pepper to taste
*1 lemon, zested

*6 ears sweet corn, husks and silks removed


1. Place the first 6 ingredients into a bowl and mash until just about smooth.
2. Fill a pan 3/4 full of water and bring to a boil over high heat.
3. Add the corn and boil for about 8 minutes.
4. Spread the feta/butter mixture over the ears of corn and serve.


The nice tangy flavor of feta combined with the butter and herbs is a nice way to dress up a sweet ear of corn. You'll never just boil corn and add plain butter again.

This is especially nice when you're having just a salad for dinner. Adding an ear of this special corn makes the meal seem fancier and more filling, for sure!
