Homemade Macaroni with Cheese |

Ingredients
|
* 1 lb. elbow macaroni
* 2 cups milk
* 1 cup heavy cream
* 3 cups grated cheddar cheese
* 12 Ritz crackers
* Salt to taste
* 1 tablespoon butter
* Vegetable coating spray

Directions
|
1. Preheat oven to 350F and lightly grease a casserole dish.
2. Cook and drain the macaroni according to package instructions.
3. Place the macaroni back in the pan and add a dash of salt and a pat of butter to avoid sticking.
4. Set it aside to cool a little.
5. Spoon one-third of the macaroni into the dish.
6. Cover with 1 cup of milk and 1 cup of the grated cheese.
7. Add two more layers and use the cream instead of milk for the final layer.
8. Crush the Ritz crackers in a plastic bag.
9. Sprinkle the crumbs over the top later of the macaroni and cheese.
10. Bake for approximately 30 minutes or until golden and bubbly.

My pantry used to look like a macaroni and cheese aisle in the grocery store. Aside from the money recklessly spent on all those little boxes, the ingredients listed are enough to leave a chemist tongue-twisted. Coming up with a kid-friendly version of homemade macaroni and cheese has lifted the burden of guilt I felt feeding my kids all those additives, and it's given me back a large portion of my pantry!
