1. Brush both sides of bread with 1 T. or oil. Place on a baking sheet and broil 5 " from the heat for 1-2 minutes on each side or until lightly browned. Cool slightly and cut into 1/2" cubes.
2. In a bowl, gently toss the bread cubes, tomatoes, cucumber, onions and Parmesan cheese.
3. Divide mixture among four bowls each filled with 1 C. of torn romaine lettuce.
4. In a small bowl, whisk vinegar, garlic, basil and remaining oil. Drizzle over salads. Serve immediately.
