Italian Creamy Chicken and Broccoli - Crock Pot |
Ingredients

* 6 chicken breasts, boneless, skinless, cut in cubes and frozen
* 3 tbsp olive oil
* 1 (1.05 oz) pkg. dry Italian dressing mix
* 1 (11 oz) can cream of celery soup
* 1 (8 oz) pkg. cream cheese, cubed
* 1/4 C chicken broth
* 1 lg. onion, chopped
* 1/2 lb fresh mushrooms, sliced
* 1/4 tsp. garlic, minced
* 1 (10 oz) pkg. frozen broccoli florets

Directions

1. In a bowl combine the olive oil and cubed chicken
2. In a zip lock bag put the Italian dressing, add the chicken and shake to coat well.
3. Place the chicken in the crock pot, cover and cook on low 3 1/2 hours.
4. In a skillet sprayed with non-stick cooking spray put the onions, mushrooms, cream cheese, soup and the chicken broth and place over medium high heat.
5. Blend in 1/4 C of the juice from the crock pot.
6. Add the garlic, salt and pepper and stir until the mixture is smooth.
7. Pour the mixture over the chicken, cover the crock pot and cook on low for 1 hour or until the chicken is done.

Even though this crock pot meal takes a few steps - it's not just throw everything in the pot and walk away for 8 hours - it's still easier than standing over a hot stove all day. The end result is well worth the work it takes to do a step or two extra. Italian dressing mix really is a one-stop-shop seasoning, isn't it? It works very well in so many dishes.
