* 6 medium potatoes, quartered
* 2 1/2 lbs boneless skinless chicken thighs
* 2 medium onions, quartered
* 1 green pepper, chopped
* 1 garlic clove, minced
* 2 t oregano, dried (or substitute 2 Tblsp. fresh)
* 1/2 c water
* 1 t basil, dried (or substitute 1 Tblsp. fresh)
* 1 t salt
* 1/4 t black pepper

1. Layer bottom of crock-pot with potatoes.
2. Top potatoes with green pepper and onion.
3. Arrange chicken thighs on top.
4. In a small bowl, combine remaining ingredients and pour over chicken.
5. Cook, covered, for 8 hours on low.
