1. Combine rice with milk, eggs, jalapenos, and 1 cup of the cheese.
2. Place in a lightly greased casserole dish.
3. Top with remaining cheese.
4. Bake at 350 degrees for 45 to 55 minutes.

These five simple ingredients are always on hand in our house, so it would only seem natural to put them all together. Whenever I cook rice I always make a double batch ensuring this dish gets made several times a month, at least. Even with the jalapenos, this is one kid-friendly side dish. It's the cheese, of course! I have added a little finely chopped green onion when I know only grownups will be at the table.
Actually, with this basic recipe you can expand it in a lot of ways. Throw in some leftover broccoli, or tomatoes, or just take a peak in your refrigerator. I guarantee you'll find something to add!
