Jerk Pork Tenderloin Salad |
Ingredients

*1 (1 lb.) pork tenderloin
*1 tbsp + 1 tsp dry Caribbean jerk seasoning, divided
*1 tsp lime zest, grated
*1/4 C lime juice
*1 tbsp honey
*1 (8 oz.) can pineapple chunks, drained
*8 C of mixed salad greens
*1/2 cantaloupe, cut into small pieces

Directions

1. Rub 1 tbsp of the seasoning over the entire pork, place pork on a rack in a shallow roasting pan and bake in a preheated 425 degree oven for 30 minutes or until internal temperature is 155 degrees with meat thermometer.
2. Remove pork from oven when done and let stand for 10 minutes.
3. Whisk the 1 tsp jerk seasoning, lime zest, lime juice, and honey together in a large bowl until well blended.
4. Stir in the pineapple, salad greens and cantaloupe.
5. Slice pork into bite size pieces and fold into the salad before serving.

Pork tenderloin is a great value because it's all meat - no waste. Use a meat thermometer and check the pork to be sure it's 155 degrees internally, then remove and let rest for 10 minutes before cutting into pieces.
The jerk seasoning, pineapple, and lime flavors give this dish a very nice Caribbean inspired taste. Enjoy!
