KaBoom Spinach


* 3 (10 oz) pkg. frozen chopped spinach
* 1/2 C liquid, reserved from cooking spinach
* 1 medium onion, chopped
* 3 TBSP all-purpose flour
* 1 C skim milk
* 6 oz. hot pepper cheese, cubed
* 1 TBSP low sodium Worcestershire sauce
* 1/2 tsp. garlic powder


1. Cook the spinach as directed on the package.
2. Drain the spinach well being sure to reserve a 1/2 C for later.
3. Spray a skillet with a non stick cooking spray.
4. Place the skillet over medium heat.
5. Place the chopped onion in the skillet.
6. Cook 5 minutes or until the onion is fork tender.
7. Do not brown the onion.
8. Once the onion is tender stir in the flour.
9. Pour the reserved liquid into the skillet.
10. Stirring continuously pour in the milk.
11. Allow mixture to continue cooking until it just starts to become thick.
12. Carefully stir in the cheese cubes.
13. As the cheese begins to melt stir in the Worcestershire sauce and garlic powder. 14. Continue to stir mixture until the cheese completely melts and the mixture is smooth.
15. Place the spinach in a large mixing bowl.
16. Pour the cheese mixture over the spinach and mix until the spinach is completely covered.
