Kickin Chicken Chili


*2 lbs of boneless skinless chicken breast, cut up
*2 tsp ground cumin
*1/4 tsp salt
*1 Tbsp olive oil
*1 (16 oz.) pkg. frozen sweet pepper stir fry vegetables
*1 (16 oz.) jar green salsa
*1 (15 oz.) can of cannellini beans, drained well
*1 (14.5 oz.) can diced tomatoes with onion and garlic


1. Stir together the chicken, cumin and salt.
2. Heat the oil in a skillet, add the chicken and cook 5 minutes, stirring often.
3. Drain and place into the crock pot with the vegetables, salsa, beans and tomatoes.
4. Cover and cook on low for 5 hours.


This chicken chili is one of the easiest I've tried. You use frozen mixed stir fry veggies so there's very little prep work. Just open a can of beans, diced tomatoes, and dinner is ready to go in the crock pot. The aromas are great with the cumin and green salsa, too. This makes a great dish to bring to a neighbor or friend for a quick meal during moving day, or other occasion when food is needed.
