Lamb Zucchini Kabobs


* 1 3/4 lbs of lamb, cut in 1 inch cubes
* 3 zucchini cut in 1/4 inch rounds
* Olive oil
* 4 grape or cherry tomatoes* 1 tbsp parsley
* Metal skewers


1. Brush each piece of lamb and zucchini generously with the olive oil.
2. Place one piece of tomato onto each skewer.
3. Add a piece of the lamb.
4. Thread a piece of zucchini onto each skewer.
5. Continue threading in that order until all the ingredients have been used, ending each skewer with a piece of the lamb.
6. Heat the grill to medium high heat.
7. Grill the skewers for 12 minutes on an uncovered grill, turning them often.
8. Sprinkle with the parsley just before serving.


This grilled kabob is pretty simple but the flavor combination of zucchini and lamb make it very special. Lamb may be difficult to get at times, so ask your butcher if it's possible to order it ahead of time for a special cookout. Serve the kabobs alongside a nice, spicy rice dish.
