Lemon & Mint Sweet Bell Pepper Couscous


*8 oz instant couscous
*2 1/2 cups boiling water

*1/2 cup of good olive oil
*1 red bell pepper, cleaned and chopped fine
*2 lemons, juice and zest
*4 green onions, chopped fine
*6 Tbsp fresh mint, chopped
*salt and pepper to taste


1. Put the couscous into a large serving bowl, pour the boiling water over the top and stir slightly.
2. Let the couscous stand in the water 6 minutes or until the water is absorbed.
3. Add the remaining ingredients into the bowl, tossing until combined. Serve immediately.


Couscous is basically a wheat product that is served in many dishes the same way as rice - under meat and vegetables, or mixed in. It cooks fast and that is a nice benefit for using couscous. For instance, if you prep your veggies during the soaking time, this dish can be ready in under 10 minutes! That's a great advantage to using couscous, especially when you have a hungry family waiting patiently for dinner. Enjoy1
