Lemon Garlic Penne Pasta


* 12 oz penne, cooked per package directions & drained
* 6 tablespoons extra virgin olive oil
* 5 tablespoons lemon juice
* 2 garlic cloves, minced
* salt and pepper to taste

* freshly grated Parmesan cheese


1. Put the pasta back into pot after draining.
2. Add remaining ingredients (except parmesan cheese) and heat over medium heat, tossing constantly, for a couple minutes.
3. Top with Parmesan cheese.


This pasta dish is so simple, but tastes great! Look at all the lemon juice in it... and the garlic... that's the secret. Well, freshly grated Parmesan cheese really puts it over the top. You can stir in some thawed sweet green peas if desired to make it a bit more colorful and kid-friendly. Makes a nice lunch for a busy family.
