For those times, and I have them often, when I want to watch my diet, I pull this recipe out to make. My diet is saved and my family never complains about having to eat my "diet food" because it's very tasty.
Serve with a nice big baked potato with sour cream for the non-dieters and on a big pile of baby spinach for the dieters. Just squeeze a little more lemon on top of the spinach, and liberally cover with freshly ground pepper. Very yummy, either way!
