Lemon Sauce Pudding Supreme |
Ingredients

*1/4 C of butter
*2 lemons, grated rind and juice only
*1/2 C superfine sugar
*2 eggs, separated (beat whites stiff)
*1/2 C self rising flour
*1 1/4 C of milk

Directions

1. Preheat your oven to 375 degrees.
2. Beat the butter, lemon rind and sugar until fluffy then beat in the egg yolks and flour.
3. Gradually add in the lemon juice and milk beating as you add then fold in the egg whites.
4. Spoon into 5 lightly greased baking cups and place into a roaster pan half filled with water.
5. Bake in a preheated 375 degree oven for 45 minutes or until golden brown on top.

If your kids have never had homemade pudding, this is a great introduction! These pudding cups turn out lemony, pretty, and sweet. I didn't call this dessert "pudding" when I first served it to my family because I didn't know if they could make the adjustment from the instant pudding to REAL pudding that easily. This is a real honest to goodness pudding, but we've unfortunately been trained to believe that instant pudding stuff we've been eating is what pudding is all about. Call it "lemon custard" if you like just to get your kids over the "pudding" hurdle.
