Love Me Tender Fried Rice

Ingredients

* 2 TBSP oil
* 1 C rice, uncooked
* 1 clove minced garlic
* 1/2 C sliced green onions
* 2/3 C chopped, canned hot chilies
* 1/2 C diced fresh tomatoes
* 2 C low-salt broth (vegetable or beef)

Directions

1. Place oil in a large skillet and heat on medium heat until hot.
2. Add rice and sautÚ until golden brown.
3. Add garlic and stir well.
4. Add green onions, hot chilies and tomatoes.
5. Mix vegetables into rice.
6. Add broth.
7. Cover skillet and simmer over medium low heat 25 minutes.
8. Serve while still hot.
