Low Fat Spinach Chicken Pinwheels |
Ingredients

* 8 oz. pkg. non-fat cream cheese, softened
* 3 TBSP chopped green onion
* 1 1/2 C cooked chicken breast, chopped finely
* 2 TBSP non-fat sour cream
* 1 tsp. dried dill
* 4 (10 in.) low-fat flour tortillas
* 1 1/2 C fresh spinach, chopped
* Non-fat ranch salad dressing or salsa to serve

Directions

1. In a large mixing bowl, place the cream cheese, green onion and chicken and stir until well combined.
2. Add the sour cream and dill. Stir until all the ingredients are mixed very well. In the bowl, divide the mixture into 4 equal quantities.
3. Lay each tortilla out flat and spread mixture with a rubber spatula evenly over entire tortilla. Repeat for each tortilla.
4. Place some spinach evenly over the top of each filled tortilla.
5. Roll the tortillas up and secure by wrapping plastic wrap tightly around individual tortillas.
6. Refrigerate at least 2 hours or may be left overnight.
7. When ready to serve slice each roll into appetizer size pieces. (using a serrated bread knife keeps the pieces from flattening)
8. Serve with ranch dressing or salsa on the side as a dip.

This is a recipe that works just as well whether you want to use all low-fat ingredients or not. You don't have to go all or nothing! Just remember... low-fat does not mean low sugar. Check your label. But this is an appetizer. It's not intended for a meal. So, Enjoy without the guilt please. Hey, it's got chicken and spinach in it. How bad can it be?
