Macadamia Cilantro Pesto |
Ingredients

* 1/2 cup macadamia nuts, chopped
* 2 cloves garlic, minced
* 1 bunch cilantro, chopped
* 2 limes, juiced, discard limes
* 1/2 cup olive oil
* 1/4 to 1/2 teaspoon sea salt

Directions

1. Place nuts, garlic, and cilantro in food processor and chop until very fine.
2. Continue processing and drizzle in lime juice, then olive oil.
3. Put mixture in a bowl and stir in salt, tasting as you add.

If you haven't eaten macadamia nuts for a while, you may have forgotten how creamy and "buttery" they taste. The flavor is unique, which makes this pesto perfect for a special dish for a special occasion. You can use it in a lot of ways, but I like to make a pot of linguine pasta and toss with this pesto. It makes a very satisfying main dish. Chop up a handful of macadamia nuts and sprinkle on top. Enjoy1
