Mango Relish


* 2 cups mango, peeled and diced small
* 1/2 cup Burgundy wine
* 1/4 cup sugar
* 2 tablespoons white wine vinegar
* 1 tablespoon grated ginger root
* 1/8 teaspoon ground cloves


1. Put all ingredients in a saucepan over medium heat and bring to a boil.
2. Immediately turn heat down to low and simmer for 10-12 minutes, stirring occasionally.


If you don't have Burgundy wine, just use any good, hearty and dark red wine.

This relish is truly elegant and should be served with a nice pork tenderloin, turkey, or roasted whole chicken.

It's plenty sweet but still has enough tangy flavor to please the educated taste bud.
