Maple Syrup Dressed Apple Beet Salad |
Ingredients

*6 small beets
*2 Tbsp of water
*1/2 cup any oil/vinegar dressing
*1 Tbsp maple syrup
*1 sweet apple, quartered, cored and sliced thin
*1 tart apple, quartered, cored and sliced thin
*4 cups arugula

Directions
|
1. Cover the beets with water in a microwave safe bowl, cover the bowl and microwave on high 5 minutes.
2. Run the beets under cool water and gently rub off the skins then cut into chunks.
3. Whisk the dressing and syrup together well in a salad bowl.
4. Add the apples and arugula and toss to coat.
5. Serve the salad in individual bowls and top each salad with beets.

If you can't get fresh beets, you can use canned beets - just drain them well and pat them dry.
Use one sweet apple and one tart apple for the best flavor combination with the peppery taste of the arugula. If you can't get arugula, any good mixed green salad will work. Enjoy!
