Melon & Mixed Fruit Bowl with Mint Dressing

Ingredients

*1 C of water
*3/4 C of sugar
*3 tbsp lime juice
*1 1/2 tsp fresh mint chopped
*1/8 tsp salt

*1/2 small watermelon, cubed
*1 small cantaloupe, cubed
*1 small honeydew melon, cubed
*1 large peach, sliced
*1 C of fresh blueberries

Directions

1. Place the first 5 ingredients into a saucepan over medium high heat and bring the mixture to a rapid boil.
2. Boil 2 minutes then remove from the heat, cover and cool.
3. Mix all the fruit together in a large bowl.
4. Top with the cooled syrup, cover and chill 2 hours, stirring often.
5. Drain extra liquid off before serving.

Story

You don't have to have a lot of whipped cream or other heavy ingredients when you dress a fruit salad. This refreshing mixed melon and fruit salad is great just as it is, with a light dressing of mint and lime.
